I have to say that I loved making this black bean burger because it gave me so many ideas of what I can add and change up next time. This one was pretty simple, 1 can black beans mashed up, 1 c cooked brown rice, 1 T cumin, shredded carrots and onions sautéed until soft, some salt and pepper. I wanted to keep it fairly simple and put it on a bun with lettuce tomato and catsup to make it as close to a burger as I could. JD and Duncan really liked it. JD was skeptical though because he knew that it was not real meat so he was wondering what was going on. Because it tasted okay though, he did not make a big deal about it and ate it. Score for me! He actually ate it with a smile and a large helping of quinoa and kale salad. Mission accomplished. Or so I thought until he asked me to wait a little while before a served it again. He assured me that he liked it, but that he just didn't want to get sick of it. LOL, O.K.
For Cooper, I made organic (always) chicken because has he's been light in the protein area lately and he needs to get it in. People who are eating a well-rounded whole food plant-based diet do not need to worry at all about protein because they get enough varying up all of the different food sources thorough the day. Because my 3 guys have difficulty getting down any type of vegan protein sources or large amounts of veggies, I have to worry about it and work hard to make sure they are getting enough.
In all, they are eating less animal protein, absolutely no processed anything , and SO many more vegetables, therefore I am thrilled. Veggies have taken center stage at our dinners so I can not complain. Dunc can take or leave animal protein. Sometimes if we are out to dinner somewhere he chooses it, but generally he likes to eat what I am eating and since I am eating no animal protein he not eating as much. He is also an animal lover and since he was very small struggled with the idea of eating animals. I think eating this way relieves him of being guilty over eating something that he knows he would like rather hug.
